Kitchen Stewarding Supervisor – (220004P3)

Duties and Responsibilities:

  •    Responsible for the overall supervision of stewarding personnel, for ensuring the dishwashing process, cleaning of stipulated areas and equipment, refuse  disposal and maintenance of operating supplies is undertaken efficiently  and timely to a high level of cleanliness and hygiene.
  •    Responsible for containing costs within budgets and for a close working relationship with department heads.
  •    Attends F&B meetings and liaises with all F& B Departments.

Supportive Functions:

  • Staff Supervision
    • Prepares staff roster and organizes shifts to ensure appropriate staffing at all times.
    • Maintains work attendance records for payroll purposes.
    • Hires & dismisses staff, implements disciplinary procedures in conjunction with personnel office.
    • Imparts training through on the job observation and correction and the planned train the trainer program.
    • Inspects staff to ensure that they are in proper uniform, clean and well groomed.
    • Liaises closely with all related department heads in order to guarantee smooth running of the operation and to guarantee minimum par stock levels of china/glass / cutlery at all times.
    • Responsible for the direction, training and control of stewarding personnel & for a close working relationship with the kitchen and other F&B Department.
  • Cleanliness and Hygiene Standards
    • Learns the local health authorities sanitation and hygiene

requirements.

    • Ensures that local & hotel’s standards of cleanliness, hygiene and sanitation are maintained.
    • Ensures refuse is placed in proper container & is disposed of promptly and hygienically.
  • Material Control
    • Determines that adequate operating supplies are available and in good condition.
    • Initiates requisitions for operating & cleaning supplies.
    • Controls breakage of operating supplies & controls usage of operational materials.
    • Liaises closely with the executive chef regarding requirements of operational supplies.
    • Conduct weekly kitchen inspections.
    • Responsible for adequate operational & cleaning supplies, for controlling use & breakage and for ensuring proper use & maintenance of equipment.
  • Administration
    • Compiles the log book recording breakage, cleaning

Material usage & other appropriate details.

    • Initiates repairs & maintenance work orders.
    • Contains costs of operating the department within the established budgets & places P.O.S.
    • Learns the hotel’s fire and safety precautions & how to operate the fire fighting equipment.
    • Attends meetings as directed.
    • Learns the personnel administration requirements.
    • Takes inventories as stipulated at least on quarterly basis.
    • Participates in the energy conservation program through control of the stewarding operation.
    • Follow all internal F&B policy & procedures standards .
    • Responsible for operating within stipulated costs, for recording data as directed & for conforming to the hotel’s rules & regulations.

Qualifications

Specific Job Knowledge, Skills and Abilities:

The individual must possess the following knowledge, skills and abilities and be able to explain and demonstrate that he or she can perform the essential functions of the job, with or without reasonable accommodation, using some other combination of knowledge, skills, and abilities:

  • Must be able to speak, read, write and understand the primary language(s) used in the workplace.
  • Must be able to read and write to facilitate the communication process.
  • Requires good communication skills, both verbal and written.
  • Most tasks are performed in a team environment with the employee acting as a team leader.  There is minimal direct supervision.
  • Must possess basic computer skills.
  • Advanced knowledge of the principles and practices within the Rooms
  • Ability to apply supervisory /management soft skills.
  • Requires manual dexterity to use and operate all necessary equipment.
